Step into cocos | an every day cafe + shop — the perfect blend of cafe goods, sustainable shop items, and artisan fare.

Esmerelda Betancourt began her new journey as an owner in December of 2023, where she completely redesigned the space. Since then, she has captured her background, while infusing her cafe with memorabilia, art, and international handmade items.

Growing up in Fort Morgan, Colorado, Betancourt saw Greeley as the ideal place to start a business: a growing community with immense potential. Through her time spent living in Hawaii and annual vacations to Europe, she found design and product inspiration for cocos, which offers art from artists in Hawaii, sustainable items made in Portugal, and a chance to bring something different to Greeley.

Located in St. Michael’s Square, on the west end of Greeley, cocos offers a fine selection of locally made French pastries, espresso items made with locally grown coffee beans, stunning matcha options, and delectable savory snacks.

Betancourt has shown her passion for supporting her community by hosting events and collaborating with other local business owners, such as hosting yoga classes and curating specialty drinks.

Come enjoy the delights of cocos at 6560 W 29th St in Greeley, snuggled near Sola Salon Studios! Hours are 7 am to 4 pm, Monday through Friday, and 8 am to 2 pm, Saturday and Sunday. Follow along for updates and upcoming events on their Instagram @cocoscafeshop.

Annie is the best and I could not imagine this process with out her! When I first walked in to Lupton Village office, Annie never looked at me as too young to buy, she always treated me as a potential buyer. She took my dreams of being a homeowner by the age of 21 and made it happen. She always made sure I was in the loop and updated on the progress of the house! My unit was popular amongst other buyers but Annie was honestly the reason I went under contract that day. I will forever be grateful for Annie and the fact that she made sure I got my dream first home by the age of 21!
